Ripley first activated the self-destruct, then she was heading towards the shuttle, but the alien blocked the path, so not knowing how long it would be there she went back to turn off the self-destruct to give herself more time, but by the time she got back it was too late to turn it off. So she just had to risk it and head for the shuttle anyway. Which is why she left Jones there, cause she intended on heading back that way. P.S. What happened to Dallas is shown in a deleted scene if you're interested, though since it was cut how canon it is is up for debate.
