In Japan, they use a sticky rice thats able bind together to hold a filling, the triangular rice balls tanjiro made are called onigiri, and they are usually stuffed with either salmon, tuna, cod etc. Considering Tanjiro made grilled fish skewers the day prior, he is probably just changing it up for some variety. Riceballs are good because you got your carbs, protein stuffing, and that extra salt he mentioned would be the electrolytes. (I also thought riceballs were just rice for like forever lmao) Some places even make it like a dessert and use a jam or another sweet filling :)
