That position in the kitchen is called "back of house expeditor)", basically a person that expedites the orders and keeps staff cognizant of time (manager). Jess and Richie are not an actual chefs. Sydney is needed for that! I do believe the relief of him driving and showing his growth was an awesome payoff for the audience, but realistically, it looks like Carmy put him in the front of the house, when he's much better keeping the uptempo of the production.
