As for Katakuri, if you looked at the way he moved when he was chasing Luffy during the tea party it should become clear that he's a Logia type like Enel, Ace and Sabo, Akainu and Caribou. Still, the Armament Haki should enable Luffy to do him damage provided he can hit him. Then again, thinking back on Skypia and on Hancock and her sisters, those people were able to dodge Luffy's Gatling Gun and similar attacks through the use of observation Haki. Thinking about everything it should become obvious what's happening.

You are not that far off about Pudding, essentially she's your basic tsundere. At this point, Pudding had put up the evil front she had crafted to protect herself from the others mocking her for her third eye for so long that it became a part of her. Then, when Sanji saw her eye and, rather than mocking it or acting horrified of it he called it beautiful, that brought back the part of her that simply wanted to be accepted for who she really is: the part that she'd buried so deep she forgot it even existed. So now she's almost literally at war with herself: the nice Pudding, who finally found someone who accepts all of her and now is head over heels in love with him, and the hostile/evil Pudding, who comes out to protect her whenever things become difficult (and considering how shy and awkward she is around Sanji that's bound to happen a lot.)

The reason Pudding acts so "bipolar", is because as she mentioned early on in the arc, Big Mom values her because of her 3rd Eye (because of the ability that all Three-Eyed Clan people have, albeit not confirmed to be true for hybrids, which she states as so to Big Mom), AND because of her ACTING SKILLS; Thus, since she's done all kinds of different acts all throughout her life (and because everyone has only insulted her 24/7 her entire life, and Sanji is the first person to treat her normally), her mind is basically a huge mess, because of abnormal events having happened to her within the last few days, in a row.
