The Chinese mythological roster is a thinner than it ought to be, largely because historical Chinese bestiaries that have been translated into english tend to be sort of clinical, but I'm chipping away at it as I find good inspiration.
If you're curious about Jiangshi; there's a whole genre of Jiangshi movies that was super popular in 80's and 90's Hong Kong cinema, the best of which was probably Mr. Vampire 4: Uncle Vampire. These stat blocks pull from the cinematic tradition, but have elements of the earlier folkloric traditions blended in.
Baigujing (White Bone Demon) is a creature that appears in the 16th century Journey to the West; since it's fiction she gets a lot more juicy details than the bestiaries of the period tended to provide.
We've also got an embarrassment of riches from Cobramode: some imperial duckfolk, some sparrowfolk Team Rocket/Ginyu Force types, a carp/phoenix, a monkey king, a 5-thunders exorcist, a demonic dance-kung-fu master, and a telekinetic sword master.
