You guys need to keep in mind that Melisandre is working on prophecy - the show has not made that prophecy very explicit, and has only mentioned it once in passing, but in the books it is one of the main through lines in the story - Anyhow, right now she believes that Stannis is "the lord's chosen one, the warrior of light", the prince that will lead the armies of light and life against the armies of darkness and death that are coming from the north (can you guess whose army might that be? HINT: it is NOT the Lannister's, nor the Bolton's, lol) In essence, she is the ONLY ONE - save for the wildlings, I guess - that knows who the REAL enemy is, and her mission is to get all the kingdoms together, united under Stannis so they can fight in the "great battle" to come. That mission is ALL she cares about. You asked, How does she know things?, well, after all you have seen, you should know that she possesses some sort of magical power, she can see glimpses of the future in the fire, and she is definitely some kind of witch. I think she senses some kind of power in Jon, and I believe her plan was to try to make another "shadow-baby-demon" with him before Stannis' army leaves for Winterfell. Perhaps to use it against the Boltons. Didn't work though. Maybe she already knew it would not work. Who knows??? LOL
