I also realized that Psycho has 2 versions. Which should I watch between "theatrical" and "uncut" and why? I'll likely go with the version that most people are able to aquire.

The differences between theatrical and uncut are super negligible - no scenes are cut in theatrical, some scenes are just extended. Pick whatever's most available, which'll likely be theatrical.
