Those already can perfectly tell the future. The gospels despite being defective copies likely are fairly accurate as well. But Echidna literally could know anything in the past present or future if she used her power. She just didnt like doing that since she likes learning. Yes someone like Subaru could change the future but something like her power can also just adjust and read that new future.

It is hinted at, insinuated at, hinted at again, and outright shown in so many indirect ways that they are basically outright saying that Minerva is Emilia's real mother. Part of why is misunderstanding of the power structure and relating it to a literal slur of their world. They call half elves, half devils because the damage Satella did to their world was so severe that there is no one in the world who doesn't hate elves to some extent. They do kinda explain this if you pay attention more towards the parts of season 1 where Suburu is back in the capital and he's interacting with the city with a whole crowd. Half of that crowd were half of 2 different races, but they all shared the same racism towards Emilia. Satella is that hated. She's basically like Voldemort in Harry Potter but even worse to promote targeted racism and it to be socially accepted. The rest you might have missed are just all of the hints towards what is going to happen throughout the series. Some of it foreshadowing and some of it there so you can actually somewhat piece together what might happen. Despite missing some of the key story elements it's still fun to see ya watch it though. It doesn't bother me that much, but understanding some of what you missed would give more clarity to season 3.
