Sophia likely felt that she couldn't reveal her troubles to the Princess. Her status is very low and she felt she that could be easily replaced with another servant. After all, she was placed to watch over comatose princess nobody thought would wake up. It can be considered an insult "you are so worthless, you'd better be doing nothing".
Also, I doubt it started up as full on betrayal. He likely asked for small things first. But now the Baron had her cornered. He could simply provide letters showing that she was leaking information. It was a doomed situation for her either way.

I don’t feel bad for Sophia because Addie asked her several times if she wanted help with her mom and she turned her down. But I do feel bad for Addie because in this life and the last the people closest to her keep betraying her. First Sophia, then Herja, and now did about to be a whole vampire
