Also, you seem to have misunderstood Mado about wearing ghouls out he only said that the method to taking on the ones with the Ukaku type Kagune is to wear them out not the method to taking on all ghouls. The Ukaku Kagune is released from the upper back and can be liquified like we see Ayato do in this episode to shield his entire body but it can also be hardened and used to shoot projectiles, it is also very light hence why the users are known for their speed and mobility and the best way to beat them is to tire them out.
