To explain where in the timeline that agreed and Gluttony got to Rem and the others, the entire situation with the blank letter is because Rem was already erased. While Subaru dictated the letter, Rem wrote it. But because Rem was erased, the writing on the letter vanished making it blank. So by then, Rem’s name and memories were already eaten.
