You may already know what it is, but it's a style of animation where you trace drawings frame by frame over a video to get a very fluid piece of animation. Here they're probably tracing over 3D CGI models but for over a 100 years animators have used actors and film reel for rotoscoping.

There's no "can I really trust this guy with my back" going on at all. It really highlights how even though they all have their differences, they're Jujutsu Sorcerers first and foremost. So when a curse that's actually a threat appears they can trust one another and fight together.
