My guess is tsukasa is just a little bit "socially inept". He's not necessarily a bad person but he's completely self interested because he doesn't understand other people.

I am a bit disappointed that you really thought soma would be a big schemer outside of the actual food wars. That is very clearly not our boy. He is a bit more of a goku and the start of the episode was basically like him training with an enemy.

IMO, Azami's plan is a failure in the making even without interference. Customers are what makes a restaurant needed and Azami got irritated that Erina was serving people at the Moon Festival who are, in his opinion, not worthy of True Gourmet Dining. If those people aren't worthy, then how are the masses worthy? And if the masses want food cooked for them a restaurant will appear for them and if it gets bullied, people will get pissed. To do what Azami wants to do, you'd have to evict all commoners out of Japan or teach all of Japan what True Gourmet is, but again he said even those in the high end of dine with big voices weren't worthy. All in all, Azami is pretty stupid, but so arrogant that he can't see his plan's flaw. Also gourmet is expensive for a reason. If every McDonald's got replaced by such a restaurant, the chain would go broke fast.
