I mean think about it, these kids literally spend who knows how many hours cooking. And it's all for somebody else. It'd be nice to be waited on for a change.

Last summer I worked an internship at a Hyatt in Green Bay, and since we were close to the Packers' stadium, all the visiting teams would stay there. We would serve each team a buffet-style dinner the night before and a breakfast the next morning. One night, the Pittsburgh Steelers were in town for a preseason game, and one of the executive chefs had me join him at the pasta station. It absolutely blew my mind. The loud sizzling of sautéing onions and garlic, the flames of the wine deglaze, and his expert noodle tosses kept drawing more and more players to watch. Eventually he let me try, and it was absurdly difficult to precisely time everything. I've have crazy respect for performance chefs ever since. Easily the best yet most intense work day of my life.
