I don't think Erina was being "bitchy" there. She doesn't like Souma at all. He throws her off and doesn't want to acknowledge one such as him. Since he said he wanted to play cards, now she can't make herself admit to wanting it too, since it puts them on the same level, at least in one respect. That's not being "bitchy." That's being insecure.

You're not wrong, but remember that people making changes to his recipe nearly cost Shinomiya everything in the past, so it's hardly surprising that he'd strictly enforce 'Following the recipe to the letter', and fail her for making a change. Not to mention that the dishes' intention was for the flavors to be balanced, and her adjustment threw that balance out of whack by heightening one ingredient over the others. Honestly, I was more pissed that he purposely included some that had already gone bad just to thin the herd then him failing her. If he'd included them, but still left enough good ones for everyone to pass, it'd be fine. Make them use their skills to pick the good ingredients, but his challenge was set in such a way that the best chefs in the world would've still lost a few members.

This guy is an arrogant ass, he's a prima donna artiste not a businessman. His logic behind expelling Megumi speaks to that. Even with substandard ingredients she managed to make the dish. To such a degree that a customer would've eaten it without complaint. In fact they may have even given their compliments to the chef. That's exactly the sort of improvisation and quick-thinking you want in an employee in a highly competitive business like that.

This series does generally get better. It keeps relying more on its premise and less on its fanservice. We may love fanservice, but the actual meat underneath is what feeds us.
