Edit: The old fix worked for me all the way through mid spring 2022 or so, but now the game is back to forcefully preventing it from working. There is now an option to switch to 16:9 in the game but it does not affect the menu, so parts of the character may be out of view at 32:9 and wider. I'd say we're better off playing and supporting games like the new Aliens, Back 4 Blood and such.

Although the game may default to the user's desktop resolution when it is first launched, it definitely does not allow to select it, so selecting any other resolution will lock you out of selecting a 21:9 and wider resolution. This behavior is probably how a Steam user managed to not see the pillarboxing, but the issue of the cropped and enlarged UI remained.
